Blueberry- Super ice-pops

1 bag organic frozen blueberries (8ounces)

1 cup organic orange juice

1 organic banana

1 teaspoon black raspberry powder (available at the health-food store)

1 tablespoon organic maple syrup

1 table spoon raw local honey

blend all ingredients in a blender until smooth, pour into 8 ice pop molds and freeze over night.

Outstanding Oatmeal- walnut-Chocolate Chip cookies

Outstanding Oatmeal- walnut-Chocolate Chip cookies

1 cup organic raisins
1 cup unsweetened organic apple juice
¼ cup good quality organic walnut oil, almond oil or hazelnut oil (hazelnut is the yummiest)
Splash vanilla extract
1 cup organic oat flour
1 cup organic rolled oats
½ teaspoon baking soda (organic)
½ teaspoon ground cinnamon
Dash ground cloves
Dash nutmeg
Dash Organic ground cardamom
Pinch sea salt
1 cup malt sweetened chocolate chips
1 cup organic chopped walnuts (soaked then roasted) or organic slivered almonds

Soak raisins in apple juice overnight. Preheat oven to 375 …puree raisin/juice together in blender, add oil and vanilla blend again. Combine rest of ingredients (except nuts and chocolate chips) in a large bowl, mix well. Add raisin mixture to dry ingredients – stir until mixed well fold in chips and nuts until incorporated. Spoon and drop batter onto cookie sheet (teaspoon size) @ 375 for 15-20 minutes or until lightly brown . Be sure to check on them and rotate the cookie sheets – these cookies need to be watched! Makes about 60 tiny cookies.

Poached Pears

Makes 2 servings

  • 4 Bosc pears
  • 2 cups apple juice
  • 1 tablespoon maple syrup
  • Dash, clove and cinnamon

Pre-heat oven to 375, cut the bottoms off pears so they are stable in a glass casserole dish, pour in juice and syrup, sprinkle with spices.  Bake until fork tender basting every 15 minutes or so, cooking time about 1 hour. Plate and spoon sauce over pears.

 

Peach Sorbet

Makes 2 servings

  • 1 bag organic frozen peaches
  • 1 Tablespoon raw honey

Thaw blueberries for five minutes place berries and honey in food processor and pulse until blended. Serve with sprig of fresh mint. Honey will not blend through you will notice a ‘ripple’

Peach Compote

Makes 2 servings

  • 1 bag organic frozen peaches
  • ½ cup apple juice
  • Juice of half a lemon

Pre-heat oven to 375°, place all ingredients in a glass casserole dish and bake for about 30 minutes.

Chocolate Covered Strawberries

Makes 2 servings

  • 1cup fresh strawberries
  • 1 tsp org. cocoa powder

Sprinkle powder on top and enjoy

Cherry Compote

Makes 2 servings

  • 1 bag organic frozen cherries
  • ½ cup apple juice
  • Juice of half a lemon

Pre-heat oven to 375°, place all ingredients in a glass casserole dish and bake for about 30 minutes.

Blueberry Sorbet

Makes 2 servings

  • 1 bag organic frozen blueberries
  • 1 Tablespoon raw honey
  • mint (optional)

Thaw blueberries for five-eight minutes. Place berries and honey in food processor and pulse until blended. Serve with sprig of fresh mint. The honey will not blend in you will notice a ‘ripple’ if you try to re-freeze it will be a block of ice, in that case you can choose to make popsicles out of thi.

Blueberry Compote

Makes 2 servings

  • 1 bag organic frozen blueberries
  • ½ cup apple juice
  • Juice of half a lemon

Pre-heat oven to 375°, place all ingredients in a glass casserole dish and bake for about 30 minutes. This will be very juice, you can poor off juice or enjoy over the banana frozen delight.

Banana Frozen Delight

Makes 2 servings

  • 2 bananas, peeled, cut into large chunks and frozen
  • 1 teaspoon honey

Place the frozen bananas in a food processor honey and blend until smooth – the honey will form a ripple and won’t blend all the way through.
