Roasted Banana

Makes 2 servings

  • 2 ripe organic bananas – peeled and halved lengthwise
  • 1 Teaspoon pastured butter
  • 1 Teaspoon maple syrup
  • ½ Teaspoon vanilla extract
  • 1 dash cinnamon
  • 1 dash cocoa powder
  • ¼ cup toasted pecans, chopped

Preheat oven to 375°. Place bananas on a greased cookie sheet, dot with butter, drizzle with maple syrup, vanilla extract and sprinkle with cinnamon. Bake for 8-10 minutes, turn over and bake another 10 minutes or until bananas are caramelized. Dust with cocoa powder and top with nuts.
